Cheap, quick and tasty

Dear Elizabeth

In the next couple of weeks, thousands of teenagers across the UK will head off to university. They’ll be living, budgeting and cooking with no help from mum and dad.

It got the Friends of the Earth office thinking about our own student days, and the first meals we learnt to cook that were actually worth eating.

I had three criteria for my first culinary experiments – I had to be able afford the ingredients. It needed to be possible to get my grub from pan to plate before Neighbours started. And I wanted to be able to eat – and maybe even enjoy – my creation...

Over the years, I’ve added new recipes to my repertoire, but I’ve never forgotten those first kitchen forays. It’s still just as important to me that my food is cheap, quick and tasty.

For every student memory of spatula-melting or adding mouldy tofu to my pan (seriously horrible), I can remember a bit of kitchen genius that has stayed with me. Like how to save pounds by opting for a veg-heavy diet, or how to make my meat go further (really, really small bits). I'm especially fond of the recipes that kept me going in my student days, which still find a place in my heart (and on my hob) today.
